Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • For icing: 2 cups powdered sugar, 2 tbsp milk, black and orange food coloring

Instructions

  1. Cream the butter and sugar until light, then beat in the egg and vanilla.
  2. Whisk together the flour, baking powder and salt; mix into the wet ingredients.
  3. Chill the dough for 30 minutes, then roll to ¼ inch thick.
  4. Cut out bat and pumpkin shapes and chill again for 10 minutes on the baking sheet.
  5. Bake at 350°F (175°C) for 10–12 minutes until the edges are just set.
  6. Cool completely before decorating.
  7. Whisk the icing ingredients and divide, tinting one batch black and one orange.
  8. Outline and flood the cookies, then let the icing set before serving.

These cut-out sugar cookies are a Halloween tradition for a reason, and they happen to be a great project to hand off to little helpers. The dough holds its shape crisply so your bats stay batty and your pumpkins stay plump, and a two-color icing keeps the decorating quick and satisfyingly spooky.

Cookies that hold their shape

Chill the dough both before and after cutting so the shapes stay sharp in the oven. Roll to an even quarter-inch and they will bake up uniform, with those clean, crisp edges you want for outlining.

Two colors, endless fun

All you really need is black and orange. Outline each shape with a slightly thicker icing, then flood the middle with a thinner one, nudging it into the corners with a toothpick. That is all it takes for tidy bat wings and pumpkin ridges.

Prep ahead

The dough freezes for up to three months, and decorated cookies keep in a tin for a week — perfect for getting ahead before the party.
