Ingredients

  • ¾ cup pumpkin purée
  • ¾ cup warm milk
  • 2¼ tsp active dry yeast
  • 3 tbsp sugar
  • 3½ cups all-purpose flour
  • 1 tsp salt
  • 3 tbsp butter, softened
  • 1 egg
  • Cinnamon sticks, broken into small stems
  • Melted butter, for brushing

Instructions

  1. Warm the milk and stir in the yeast and a pinch of sugar; let it foam 5 minutes.
  2. Mix in the pumpkin purée, sugar, egg, salt and softened butter.
  3. Add the flour and knead 8 minutes until smooth and slightly tacky.
  4. Cover and let rise until doubled, about 1 hour.
  5. Divide into 12 balls; tie loose loops of oven-safe twine around each to form pumpkin ridges.
  6. Proof 30 minutes until puffy, then bake at 350°F (175°C) for 20–22 minutes.
  7. Brush with melted butter, cool, then snip away the twine.
  8. Press a small cinnamon-stick stem into each roll and serve.

These rolls are proof that a little effort goes a long way. Real pumpkin gives the dough a tender crumb and warm golden hue, and a few loops of kitchen twine before baking create those charming pumpkin ridges. A snapped-off piece of cinnamon stick finishes each one as a stem.

Roll each portion into a ball, then tie loose loops of oven-safe twine around it like pumpkin segments — loose is key, because the dough puffs as it bakes. Snip the twine away once the rolls cool and tuck in a cinnamon stem.

Resist adding too much flour; a slightly tacky dough bakes up wonderfully pillowy. Let the rolls proof until puffy and nearly doubled, and brush them with butter straight out of the oven for a glossy, tender top.
