  • 2 tbsp butter
  • 1 onion, diced

  • ¼ cup flour
  • 6 cups chicken broth
  • 1½ lbs cooked chicken, shredded
  • 1 cup frozen peas
  • For the dumplings: 2 cups flour, 1 tbsp baking powder, 1 tsp salt, 1 cup milk, 3 tbsp melted butter

Instructions

  1. Melt the butter in a large pot and soften the onion, carrots and celery for 7 minutes.
  2. Stir in the garlic, then the flour, and cook 1 minute.
  3. Gradually whisk in the chicken broth until smooth and slightly thickened.
  4. Add the shredded chicken and simmer gently for 10 minutes.
  5. Mix the dumpling ingredients just until combined into a soft batter.
  6. Drop spoonfuls of batter onto the simmering broth.
  7. Cover tightly and cook 15 minutes without lifting the lid, until the dumplings are fluffy.
  8. Stir in the peas, season to taste, and serve hot.
