Ingredients

  • 1 lb boneless chicken thighs, bite-size pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 garlic cloves, minced
  • 1 cup dry orzo
  • 2 1/2 cups chicken broth
  • 2 cups baby spinach
  • 1 lemon, zested and juiced
  • 2 tbsp grated parmesan
  • 2 tbsp chopped parsley

Instructions

  1. Season chicken with salt and pepper. Brown in oil in a deep skillet for 5–6 minutes; remove to a plate.
  2. Add garlic and dry orzo; stir 1 minute.
  3. Pour in broth and return chicken. Simmer gently 10–12 minutes, stirring, until orzo is tender and chicken cooked through.
  4. Add a splash of water if needed. Fold in spinach until wilted.
  5. Turn off heat. Stir in lemon zest, juice and parmesan; top with parsley.

This is a practical one-pan dinner: brown the chicken, toast the orzo in the same skillet, then simmer it in broth. The pasta absorbs the savory browned bits, and the lemon goes in at the end so it stays fresh.

Watch the liquid, not the clock

Different orzo brands absorb broth differently. Stir and add a splash of water if the pan dries out before the pasta is tender. Keep the heat at a gentle simmer to prevent a sticky bottom.

Serving and storage

Spinach wilts in a minute; add it only after the orzo is done. Leftovers can be refrigerated three days. Add a little water when reheating to loosen the pasta.

Adjust the liquid as the orzo cooks

Orzo absorbs broth, and evaporation varies with pan size and heat. Stir regularly and watch the pasta rather than relying only on the timer. If the skillet dries out while the orzo is still firm, add a little water or broth.

Add the spinach and lemon at the finishing stage. Taste before adding more lemon juice: zest adds aroma, while juice adds acidity. Browning the chicken is only an early cooking step; check its final doneness with a thermometer.

Can I substitute rice for the orzo?

Not with the same liquid ratio and timing. Rice and orzo cook differently, and the recipe has not been tested as a rice dish. For a rice-based meal, try the linked bowl recipes instead.
