Ingredients

  • 2 packs Buldak (Hot Chicken) ramen
  • 2 large egg yolks
  • 1 whole egg
  • ½ cup grated parmesan
  • 2 tbsp heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Reserved noodle cooking water
  • 2 scallions, sliced
  • Black pepper and toasted sesame seeds

Instructions

  1. Boil the noodles per package directions; reserve 1 cup of cooking water, then drain.
  2. Whisk egg yolks, whole egg, parmesan and cream in a bowl until smooth.
  3. In the warm pot, melt butter and soften the garlic for 30 seconds off high heat.
  4. Add noodles and half the buldak sauce packet; toss to coat.
  5. Temper the egg mixture with a splash of hot noodle water, whisking constantly.
  6. Off the heat, pour the sauce over the noodles and toss until silky, loosening with noodle water as needed.
  7. Taste and add more buldak sauce for heat.
  8. Top with scallions, black pepper and sesame seeds; serve immediately.

This bowl is what happens when two favorites crash into each other in the best way. The buldak brings the punchy chili heat; a silky egg-and-parmesan sauce rounds it out with a mellow, savory creaminess that keeps the spice in check. Best of all, it comes together faster than delivery.

Keeping the sauce silky
