- 2 cups shredded low-moisture mozzarella

Instructions
- Salt the eggplant rounds and rest 30 minutes, then pat completely dry.
- Preheat oven to 425°F (220°C). Set wire racks over two sheet pans.
- Set up three bowls: flour; beaten eggs; breadcrumbs mixed with ½ cup parmesan.
- Dredge each round in flour, then egg, then the breadcrumb mixture.
- Arrange on the racks, spray with olive oil, and bake 25 minutes until golden, flipping once.
- Spread a little marinara in a baking dish, then layer eggplant, sauce, and mozzarella; repeat.
