Ingredients

  • 1 cup plain pumpkin purée
  • 3/4 cup cottage cheese
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/4 cup neutral oil
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp fine salt
  • Optional: 1/2 cup chopped pecans

Instructions

  1. Heat oven to 350°F (175°C). Line a 12-cup muffin tin.
  2. Blend pumpkin, cottage cheese, eggs, maple syrup, oil and vanilla until smooth.
  3. In a large bowl whisk flour, baking powder, baking soda, spice and salt.
  4. Pour the wet mixture into the dry ingredients and fold just until no flour streaks remain. Fold in pecans if using.
  5. Divide among the cups, filling each about three-quarters full.
  6. Bake 18–22 minutes, until tops spring back and a toothpick shows a few moist crumbs.
  7. Cool in the tin for 5 minutes, then move to a rack.

These muffins are for the morning when you want pumpkin spice, but you also want breakfast to keep you going. Cottage cheese gives the batter body and a gentle tang; pumpkin keeps it moist. The trick is to blend the cheese smooth and use enough flour that the muffins bake up like muffins, not little cheesecakes.

Why the batter works

Blending the cottage cheese with the wet ingredients gets rid of curds. Fold the flour in by hand after that: a blender can overwork the batter and leave a tough crumb. Do not swap pumpkin pie filling for plain pumpkin purée; the filling already has sugar and spice and will throw off the balance.

What to look for in the oven

Fill each cup about three-quarters full. The tops should spring back lightly, and a toothpick should come out with a few moist crumbs, not wet batter. Let the muffins sit in the tin for five minutes before moving them to a rack. That short rest keeps the bottoms from tearing.

Easy swaps and storage

Chopped pecans or a small handful of chocolate chips work here; keep add-ins to about half a cup so the muffins still rise. Store covered for two days at room temperature, or refrigerate up to five days. Warm a chilled muffin briefly before serving to soften the crumb.

Blend the dairy, then fold the flour gently

Blend the cottage cheese with the wet ingredients as directed to distribute its curds. Once flour is added, fold only until dry streaks disappear rather than continuing to beat the batter.

Use plain pumpkin puree and check that the baking powder and baking soda are fresh. Divide the batter evenly so the muffins finish at similar times, and allow them to cool before judging the crumb.

Can I replace the cottage cheese with yogurt?

Yogurt has a different consistency and composition, so the swap may change the batter and crumb. It is not a tested equal-quantity substitution in this recipe. Use the stated cottage cheese version for the clearest starting point.
