Crispy Garlic Roasted Cauliflower (Golden & Caramelized)

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • Salt and black pepper
  • 2 tbsp grated parmesan (optional)
  • Fresh parsley and lemon wedges, to serve

Instructions

  1. Preheat oven to 425°F (220°C) and line a large sheet pan.
  2. Pat the cauliflower florets thoroughly dry.
  3. Toss with olive oil, garlic, smoked paprika, salt and pepper.
  4. Spread in a single layer without crowding the pan.
  5. Roast 30 minutes, flipping once, until deeply golden and crisp at the edges.
  6. Add parmesan for the final 5 minutes if using.
  7. Finish with fresh parsley and a squeeze of lemon, and serve hot.

Roasting is where cauliflower stops being boring. Cranked up high with garlic and good olive oil, the florets caramelize into nutty, crackly-edged morsels — the kind that never quite make it from the sheet pan to the table intact.

Crispy, never soggy

Three things matter: dry the florets well, give them room to breathe on the pan, and roast hot at 425°F. Crowding traps steam and steam is the enemy of browning, so spread them out and flip once for even color.

Easy flavor spins

  • Parmesan-garlic: shower with grated parmesan for the last five minutes.
  • Sweet heat: hit it with chili flakes and a drizzle of hot honey out of the oven.
  • Lemon-herb: finish with lemon zest and chopped parsley.

How to serve it

Set out a creamy tahini or garlic-yogurt dip and it becomes a shareable starter, or pile it next to roast chicken and grains for an easy dinner.
