Ingredients

  • 2 large eggplants, sliced into ½-inch rounds
  • 2 tsp kosher salt
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 2 cups Italian seasoned breadcrumbs
  • 1 cup grated parmesan, divided
  • 3 cups marinara sauce
  • 2 cups shredded low-moisture mozzarella
  • Olive oil spray
  • Fresh basil, for serving

Instructions

  1. Salt the eggplant rounds and rest 30 minutes, then pat completely dry.
  2. Preheat oven to 425°F (220°C). Set wire racks over two sheet pans.
  3. Set up three bowls: flour; beaten eggs; breadcrumbs mixed with ½ cup parmesan.
  4. Dredge each round in flour, then egg, then the breadcrumb mixture.
  5. Arrange on the racks, spray with olive oil, and bake 25 minutes until golden, flipping once.
  6. Spread a little marinara in a baking dish, then layer eggplant, sauce, and mozzarella; repeat.
  7. Top with remaining parmesan and bake 15 minutes until bubbly.
  8. Rest 10 minutes, then finish with fresh basil and serve.
